Meatless Monday: Sauteed Kale

I have recently become a complete kale addict. Ask my boyfriend or any one of my six roommates, they’ll tell you I might have an unhealthy obsession.

It all started when I found bags of kale for sale at the local grocery. I had never minded kale, but never sought it out either. I decided I would buy a bag, and try to make some kale chips.

I never made the kale chips.

Instead, I started combing Pinterest for anything that had kale with it. Kale pasta, kale quinoa, you name it. Some recipes were better than others, but I have come to the conclusion that my favorite is kale on it’s own. Its super simple:

  1. Pour some olive oil into a skillet. Just enough to coat the amount of leaves you plan on throwing in there. I usually use about 1 tablespoon.
  2. Throw the kale into the skillet and coat the leaves in the oil. THEN turn the heat on and begin stirring to keep them from burning. This is very important because otherwise it starts popping and throwing hot oil all over you.
  3. Add red pepper, garlic powder, and onion powder to taste. Remove kale after about 4 minutes of sizzling.
  4. Once removed from the heat, add lemon juice to taste. I like to use a lot.

Voila! Simple, easy, and I’ve eaten it every day for about a week now, either on its own, or supplementing some sort of protein source. It’s delicious, nutritious, and super tasty, too!
